Hormone helper muffins

Maca root is an ancient Peruvian superfood, known for its ability to support hormone balance, especially during menopause or PMS. It can also help give your libido a little boost. Thank me later ;)

Ingredients

  • 300 g ( 3 cups) almond meal

  • 2 teaspoons gluten-free baking powder or ½ teaspoon baking soda

  • 1/2 tsp apple cider vinegar

  • 1 tbsp maca powder

  • 3 organic eggs

  • 60 ml (¼ cup) cold pressed extra virgin oil

  • 1 teaspoon ground cinnamon

  • 1 tablespoons raw honey, organic maple syrup

  • 1 ripe banana

  • 200 g fresh or frozen blueberries

Method

Preheat the oven to 180°C

  1. whisk the eggs, oil, cinnamon, maca powder, mashed banana and honey to form a batter.

  2. stir in the almond meal, baking powder and apple cider vinegar

  3. fold in the blueberries

  4. divide into muffin tins

  5. Bake for 30–40 minutes until cooked through
